Named for the Bellarine Peninsula on the edge of which the city of Geelong sits, and inspired by the balanced complexity of a classic whisky sour, this bright, ruby-coloured drink brings together fruity sweetness, zesty citrus and a frothy shake of egg white with our invigorating Geelong-inspired gin.
INGREDIENTS
45ml Geelong Gin
20ml Freshly Squeezed Lemon Juice
20ml Raspberry Coulis
10ml Egg White

method
Combine Geelong Gin, lemon juice, raspberry coulis and egg white in a cocktail shaker without ice cubes.
Shake well for at least 5 seconds then add ice cubes and shake well again until chilled. Double strain into a coupette glass. Garnish with cracked pepper.
