Gaining its titular pink hue from a dash of grenadine and a stately white cap from a hit of egg whites, this interpretation of a beloved prohibition-era cocktail amplifies the gin’s fruity native finger lime, makrut lime and lime peel botanicals with a splash of lemon juice and a hit of applejack.
45ml Brisbane Gin
20ml Freshly Squeezed Lemon Juice
1 Egg White
Combine all ingredients in a cocktail shaker without ice and shake well. Add ice and shake until well-chilled.
Strain into a chilled cocktail glass.
