Named for a prank perpetuated by New York bartenders in 1874 in which customers would ask after an infamous gossiper named Tom Collins only to be handed a drink, the legacy of this cocktail has long outlived the joke. While the traditional recipe called for sweetened gin, this bright variation pairs the crisp apple notes in our Tasmania Gin with the sweetening fruitiness of apple juice and apricot liqueur.
50ml Tasmania Gin
20ml Freshly Squeezed Lemon Juice
Dash Apricot Liqueur
15ml Cloudy Apple Juice
Soda Water
Simply build ingredients in a highball glass over ice and garnish with apple slices.
