Double pot distilled in copper pot stills, using the finest Australian malted barley, and matured locally in a harmonious blend of ex-Bourbon oak casks from Kentucky’s esteemed Heaven Hill Distillery, complemented by a finishing period in Australia’s premier Apera and Tawny casks. The stars aligned when Australian Distilling Co. founder Michael Hickinbotham decided to fulfil his grandfather’s dream to produce a single malt whisky of exceptional quality. An introduction to Ian Schmidt of Tin Shed Distilling Co. by our Master Distiller, Graham Jones, both judges at the inaugural Malt Whisky Society awards in 2005, laid the groundwork for a remarkable collaboration.
