The stars aligned when Australian Distilling Co. founder Michael Hickinbotham decided to fulfil his grandfather’s dream to produce a single malt whisky of exceptional quality. An introduction to Ian Schmidt of Tin Shed Distilling Co. by our Master Distiller, Graham Jones, both judges at the inaugural Malt Whisky Society awards in 2005, laid the groundwork for a remarkable collaboration. A true meeting of minds with one mission, to create an exceptional Australian Single Malt Whisky like no other.
Crafted from meticulously sourced local malt and distilled in traditional copper pot stills, this whisky embodies the spirit of our land. Matured locally in a harmonious blend of ex-Bourbon oak casks from Kentucky’s renowned Heaven Hill Distillery, and then carefully finished in Australia’s finest Apera and Tawny casks, our whisky develops a rich, complex profile. Notes of dried fruit and spice, reminiscent of a traditional fruit cake, intertwine with the sweetness imparted by the Apera cask finish and the subtle nuances of dark chocolate and coffee from the oak. The result is a whisky of exceptional elegance, characterised by a long, lingering, yet smooth finish that complements its multifaceted flavour profile.
